Mini Pecan Ginger Pumpkin Loaves
This post is really just a friendly reminder that I have a delicious, original pumpkin bread recipe on the blog! Packed with spicy ginger and toasted pecans, it’s not your typical pumpkin bread. Perfect for fall baked good cravings. And, as you can see, it easily converts to smaller sizes. You can make it mini loaves with as well as the little fall themed mini cakes. If you try the mini cakes I’d either omit the pecans or chop them very finely so they don’t ruin the design of the pan.
For the mini loaves, shorten the bake time to 20-25 minutes, for the mini cakes, start checking at 15 minutes. Happy Fall Baking!
