A simple, stir together recipe to make rich, delicious chocolatey mochi doughnuts. I made mine with drizzled vanilla melting candy on top (more efficiency!), but I've also included directions for a traditional cream cheese icing if you prefer.

I’m so glad that I hopped onto the Apple Cider Doughnut bandwagon this fall! This baked doughnut version have that sweet/tart thing going on - tart from boiled apple cider balanced by a classic crunchy sweet cinnamon sugar coating. Tender and satisfying, they’re best when warm straight from the oven. Yum.
A little tartness from lemon, a little earthiness from thyme, a bit of sweetness from the glaze. Let’s call that the ideal dessert food pyramid. I love this unusual doughnut flavor combo. They have a comforting warmth and make for a satisfying breakfast or after dinner treat.
These baked doughnuts are rich, chocolatey, and sweet enough to feel indulgent without being sugary. The amped up chocolatey-ness comes from the espresso powder and hot coffee mixed into the batter.
Coffee shop style baked goods are my favorite comfort food and these baked doughnuts are no exception. Tender cake with warm notes of vanilla and nutmeg. Make no mistake though, these are not diet food. They are just as deliciously decadent as the classic.
