Neapolitan Cookies

These Neapolitan Cookies from Sarah Kieffer’s “100 Cookies” cookbook have been on my list seemingly forever. I’m so glad I finally found the time to make them because they are even better than I’d expected. The cookie has such a nice texture – that perfect mix of crispiness and chewiness – and I love the contrast of the sweet/tart strawberry with the vanilla and chocolate. 

I have to give kudos to Sarah for how fun they were to make and how perfectly they came out! Cookies don’t always turn out so nicely shaped, sometimes you have to nudge them into that perfect circle, but these cookies would totally tell you "I woke up like this" and they wouldn’t be lying. The dough is clever, the strawberry flavor comes from freeze-dried strawberries, so it's easy to work into the dough. You can find the recipe on her blog, but I'd also suggest checking out her book because she includes a few tips for that perfect round look you see in my photos (Hint: press the combined cookie dough into a cookie scoop like this one), and also because there are, well, about 100 amazing cookie recipes in it! I have my eye on a little lavender number...

I would absolutely make these cookies again. I think next time I'd add just a little more of the freeze-dried strawberries and try Black Cocoa instead of Dutch Process Cocoa for a slightly bolder flavor to see which I prefer. I also think I’ll have to make some strawberry ice cream for my next batch, because these would make amazing ice cream sandwich cookies!

Pre-bake, don’t they look like scoops of ice cream? Perfectly round mounds using a cookie scoop. Press the 3 doughs together, then press into a cookie scoop. Perfection.
