Tahini Thumbprint Cookies with Dulce de Leche

How is it possible that I’ve never made anything with dulce de leche before? It’s RIDICULOUS! So good. Soooo good. (That needed to be said twice.) And balanced beautifully by the sesame flavored cookie. I made them as part of my 2021 Christmas cookie collection and they didn't last long.

The tahini I bought was more bitter than I’m used to so I had to add extra brown sugar. This resulted in them spreading more than I would have liked, but they still held their shape. I definitely recommend adding these to your cookie collection for something a little different …and I definitely recommend tasting your tahini BEFORE starting the cookie dough. Lessons learned! Bon Appetit recommends Soom brand I think I'll try it the next time I want to bake with it. It's no stir which already has me sold.

I followed a recipe by Yossy Arefi on NYT Cooking. If you don't subscribe, I recommend it. It's not a cheap subscription, but I use it multiple times a week for dinner inspiration and they always have an excellent holiday cookie spread.

Difficulty:
Moderate. It's a little challenging getting that thumbprint in the cookie mid-bake.
