Lime in the Coconut Chia Seed Pudding
You put the lime in the coconut and mix it all up. Literally! Here’s another healthy, bright, and citrusy chia seed pudding idea for breakfast or dessert. I wrote the recipe with light coconut milk, but you could use full fat coconut milk if you like. You’ll get a stronger coconut flavor and thicker pudding.

Lime and coconut is a classic tropical combination, so I like to add diced tropical fresh fruit and chopped nuts on top for some crunch. I’ve included a few topping suggestions below, but feel free to make it your own. Dream up your own combination or stir additional flavors…like a dash of vanilla or even a teaspoon or two of rum...I won’t tell!

Lime in the Coconut Chia Seed Pudding Recipe:

Plan ahead:
The chia seeds need at least an hour to soften and make a pudding consistency. You can also make it in the evening and enjoy it the next morning.
Ingredients:
1 ½ cup (1, 13.5-ounce can) light coconut milk
2 TBSP lime zest
2 tsp fresh lime juice
1 TBSP agave or honey, more to taste.
5 ½ TBSP chia seeds
Topping ideas: (feel free to mix and match)
Diced fresh mango and chopped almonds, shown
Diced pineapple and chopped macadamia nuts
Diced strawberries and chopped coconut
Instructions:
Stir together all ingredients except for the chia seeds and taste to see if you need more sweetener or more lime juice. Once you’re happy with the flavor, stir in the chia seeds and divide evenly amongst serving glasses or bowls. Refrigerate for at least one hour or overnight. Add your toppings and enjoy!
